I'd like to modify the template for one subcategory on my v1.3.8 site, mainly wanting to remove the thumnail images for that category since the listings have no associated images. Can this be done via the override system or am I missing something in the admin panel that allows this?

I think the easiest way to handle this would be by creating a category specific stylesheet. Create a new style sheet named c_??.css, where ?? is the category id you want to edit.
Now just add a "display:none" attribute to anything that you don't want to display.
