Can anyone tell me why I am getting fatal errors in my logs. Seems to be taking my site down at the same time. These are not files I have ever messed with.

FILENAME_SUBSCRIBE would appear to be a constant which you've not defined, but which is being demanded by custom code you've added to one of the links on your site, perhaps a sidebox.
So ... on your page you've got a link saying index.php?main_page=FILENAME_SUBSCRIBE
... and that means whatever you've done in your site's code to generate that link is expecting that the FILENAME_SUBSCRIBE constant is already defined in your PHP files.
... but it isn't defined, thus PHP simply substitutes the name of the constant in place of whatever defined value you would have normally given it.
Basically it means you've added some sort of addon for doing some "subscribe" activity, and haven't actually installed/uploaded all the files for it. Or the reverse: you attempted to remove such an addon but didn't fully remove it, and left fragments which are triggering these errors. Simple rule is: always fully install or fully uninstall addons.

Great. Thanks......could that cause page load issues and 500 errors? I am not using the default template.
Just went to the newsletter SUBSCRIBE plugin and it says will not work w v1.5

Well, errors in general can certainly cause such issues. So, yes.

Not surprised. Better to use the Mailchimp sidebox plugin and manage newsletter things with a 3rd party service whose expertise is specifically around newsletters. Also significantly helps reduce the risk of your own store's servers ever being blacklisted because of customer complaints about unwanted news emails.
