moving to new server

Hello, I want to move the shop to a new server without long downtime.

That is not a issue, but...

Before I want to move I want to insert a few contributions with sql updates.

So I can download the shop to local, make my changes and upload to new server and when moving domain is done, new site is running great with new contributioins.

But problem is....

In the meantime i will have new customers and new orders, so stock is different.

So i have to change this also at the new server. Which tables will be affected for that?
