catalog/includes/templates/my-template/.....(no english folder)
So, is my structure all messed up? Please let me know what I need to do. Thanks for your help!

by the way, my domain is www.derwins.com
You would copy /includes/languages/english.php (the original file) to your custom folder as
/includes/languages/your_template/english.php, and edit that copy of it.

But "my template" is NOT located in the languages folder.
The location of my template is:
catalog/includes/templates/my-template
So, should I just move the english.php into the my-template folder?

You need to add a directory to the languages to hold your customized english.php.

Leave the existing folders where they are.
In your website's File Manager, navigate to /includes/languages/ and add a new folder under that, named the same as your template foldername.
You can add a custom template folder in any place there is a /classic/ folder.
