Customizing the Product Filter menu

Hello all,

I need to know how to change the list of options in the "Filter Results by:" dropdown menu. By default it is set to sort by alpha and numeric options, but I'd like to add categories to that list (or any attribute I might need).

Any help would be greatly appreciated.
