How to change "New Products for [insert month]to "My store name" Override system too

Hi,
I'm a newbie. I never posted before. I installed zencart 1.3.8a and MySQL5 5.0.2.7 I wanted to get rid of title in center box "New products for(insert Month)"and change it to "My Store Name". Where would I do That? Also, I have a question about the override system. If I put a custom folder in templates>classic Custom folder can I add a cross selling module to the module folder under my custom template file system or do I have to override modules>classic and put it there? I'm pretty confused.

Not "templates/classic Custom folder" but will be "templates/custom"
and in other places like "/modules/custom/"

Any template name you choose as "custom" is only for example
