Have figured out how to turn the -> and |_. Can't find where they are located. It would be greatly appreciated if you would point me to the file they are in.

No file; they are admin settings in Configuration > Layout Settings.
All these are relevant to the categories:

Categories Separator between the Category Name and Count ->
Categories Separator between the Category Name and Sub Categories |_ 
Categories Count Prefix  (
Categories Count Suffix )
Categories SubCategories Indent

It's a very good idea to just take some time and look at every page and subpage in admin, even if you don't think it is relevant to you. Some settings are tucked away in locations far from the place you would first think to look for them. The admin is scheduled for a much-needed overhaul after critical front-end improvements are done.
