Change Model to Product

Where would I change the Model on the product's page to Product Number?

All output text is defined in language files. In admin > Tools > Developers Toolkit, enter the exact text you want to change (or a distinctive snippet of it) in the lower left box, select all files and search. Among the results will be the file and line number where that text is defined. You can edit that file and change the definition.

Surely, modifying 1,400+ entries on more than 50 different pages isn't the only way to change the word "model" to "something else" on the product page

? Does someone know more specifically how to change that particular item?

At least 99% of the instances of "model" in the files have nothing to do with output text, let alone text on the product page. If you can't narrow the search by using a more specific term, you can at least use the "Look-up CONSTANT or Language File defines" search box, or look at the filenames to see which one(s) seem relevant to the subject.
