I would like to have the option in the drop down box "Shipped" instead of "Delivered" does anyone now what piece of code I go to to change that?

You can add or edit order-status names in Admin->Localization->Order Status
If you don't like "Delivered", it's probably safest just to rename it there.
Don't get carried away, because any changes you make there will affect existing orders, payment modules, and some internal workings of the system..
