I was wondering if it is possible for a customer to sign up for a newsletter using only their name and email.
Can this be done without a mod? I cannot find the options to configure the newsletter sign up.

Correct. In the current version of Zen Cart you must use an addon if you want to implement newsletter-subscribe-without-an-account.
