I am using the latest version of Zen Cart and when I try to install / configure paypal express any of the fields that I enter the API information do not update. I had read somewhere this may be caused by the last security patch update. I need to know how to fix it. OR how can I reinstall and keep my products and layout. Any help is greatly appreciated. I am a novice with Zen Cart.

From a quick search it looks as though you didn't install the recent security patch correctly.
Read this thread first for more of an understanding of someone else doing the samre thing as you have.
