This store will have multiple admins, each one maintaining their own category. I do not want the admins modifying each other's products, and therefore want to put restrictions on them.
How do I do this?

You'd probably have to use the MultiSite Module http://www.zen-cart.com/index.php?ma...roducts_id=563. I don't know of any way to restrict access to specific categories.
