Units In Stock - How To Turn Off?

Hi, using V1.3.9h. I know this is a simple setting but for the life of me I can`t find it or any documentation.

I`m not adding stock quantity to my products, and every product is showing "0 units in stock"....any ideas how I can get rid of this....here is an example.

admin > catalog > product type >general > at the right select edit layout > adjust the units in stock setting to "0"

But I got a different/same issue. I make the individual items as needed so "in stock" is not for my "made" items

BUT!!

I going to be adding paints and brushes, and other supplies for sale that will have inventory levels. as this setting is global can I make it localized to the top level category I select?

Many posts about this & similar matters
Not with an admin switch and one will have to get into the code for the product display and add a case or if else with the criteria

Best/easiest if all your "individual items are in one top category with all else in their relative cats....
This way you exclude it form only one cat through the custom code added

If I put 0 in Products Quantity on the product description page, the product will show Units: 0. I had to put a number in Products Quantity: to make the Units: 0 disappear.

I've checked every setting that controls inventory or showing product amounts and they are all set to false. I've looked everywhere to try to find the answer.
