Is it possible to disable all shipping modules discussing shipping on a per item basi

I'm going to sell big pieces of industrial machinery I would need to use local couriers (Italy). My associate thinks that each item sold will have a price of its own to be discussed with the courier, I do not know if it will be possible to use any of the standard module or if there is an addon shipping module I could use.

One can enable/disable shipping modules in the
admin > modules > shipping area
