Removing "Required" Customer info

Hello,

I am not processing payments directly, instead sending invoices to my customers after they have reserved their product. I would prefer to collect as few customer details as possible via ZenCart, and instead rely on the invoicing service to collect that information.

Is there any way to get rid of fields like Phone Number and Address? Via the administration panel I can only seem to remove extraneous fields like "Business" and "Salutation" but I'd really like to pare it down to merely an email address and nothing else.
