Each transaction is consistent, good or bad, there are always 5 log files as described above. Not sure what to make of this. I will post them for you shortly

What exactly is unique about your store compared to the one I just installed from a fresh copy of original Zen Cart files? What would I have to do to make mine recreate how yours functions?

Even though I have turned of logging in the PayPal module, the curl log files keep coming. How can I stop these log files?

I went through previous orders to determine when this issue began. I had assumed it began when we upgraded beyond 1.3.9d. However, it began on 7/24/12 four days prior to the upgrades. I don't recall making any changes prior to 7/28/12. In fact, I did a search for any files which were modified from 7/1 through 7/27 and found none. Widening the search to include 7/28, I could see the files which were updated. This would tend to eliminate the theory that it was an issue between the older FEC and SO plugins and the new updates.
Also, we just had a flurry of orders which are missing the transaction data. Two customers ordered twice within minutes of each other. I contacted them and so far I got one response and that person claimed that during checkout he got some sort of email error, so he tried ordering again. He had no more details beyond that.

Okay, then what are your email settings set to? Are you using SMTPAUTH? If not, why not? Find out from your hosting company whether there have been any reports of email handling issues in the same timeframe. Also ask whether your site is sending an abnormally large number of emails and is being prevented from sending emails for any reason. Find out whether their email server's spamtrapper or whatever is encountering any problems being handed to it from your website.
And again, are there any debug logs in the /cache/ folder? If not, are you sure the folder is writable so that if there ARE any errors they could even be logged? http://www.zen-cart.com/content.php?124-blank-page
