It depends on your host's requirements. I have a hosting account where I can get (as part of the package deal) a "large" number of SQL databases and a "large" amount of disk space, so I have one SQL database for each Zen Cart site (one hosting account has three different websites), but I use the same FTP credentials to access all three.
If your host charges you more for additional SQL databases, you can use the Zen-Cart DB_PREFIX value and host multiple Zen Cart databases in a single SQL database. You'd specify that STORE #1 uses the DB_PREFIX value of store1_ and STORE #2 uses a DB_PREFIX value of store2_, for example.
