There's not a lot to teach.

Navigate your way to localization->currencies.

Add/Remove the currencies you require/don't require

Click the 'update currencies' button.

If you wish to automate the updates on a regular basis, download and install:
http://www.zen-cart.com/downloads.php?do=file&id=286

Once installed, follow the instructions to set up a 'CRON' job on your server (This can usually be done via cPanel).
