fresh database update, which tables?

I want to update my shop from 1.2.7 to 1.3.0.1, I also want a clean database.

So I did a new clean install from ZC, I made my template ready for 1.3x. And now I want to backup most of my previous tables.

I read a way to do is to backup the database. Remove all tables from the DB. Copy all tables from previous db into new db. And do the install again with only db-upgrade.

But I have a lot of contributions in the previous installation which I don't use anymore. So I don't want these fields or tables into the new DB.

Which tables do I need to backup and restore into the new 1.3 db. I need the users with all history order-status. And of course all categories with product.

Another question: Are there any changes in the (html)email templates or can I use the old email-folder?

Let's try this again.

If you have a backup of the 1.2.7 database then--

Install 1.3.1 full (save overrides, etc. that are unique to your site first)

After installation of 1.3.1, delete the database and insert the database from 1.2.7.
Use zc_install to upgrade the database ONLY.

That should bring in your customers and products.

i know, i have done that. That works okay, but i have many contribs into my which I don´t use anymore, and I don´t want them into my new database. Therefor I want a clean install and just restore the tables I really use.
