Default upgrade but migrating db data after db import

I have a test store installed with 1.3.2 and a live site on 1.2.6
I want to migrate user details, past orders etc over to the test store but at the same time, I want to get the test store set up with templates, settings etc.

The problem is that if I backup my 1.2.6 database, restore to 1.3.2 , then all my database settings will be overwritten.

I could do this but then as new orders and customers come in on my live site, then how do I then move these changes over to the other store
    ARGH!!!
    there must be a way?

    Anyone any ideas?

The method that retains all data and minimizes downtime during cutover is:

    1. set up your 1.3.x site as you need it. MAKE NOTE of all changes you make in Admin, so you can re-do them when you go live.
    2. get your templates working as desired in 1.3.x
    3. when ready to go live, backup your 1.3.x database and files
    4. take your 1.2.6 site "down for maintenance"
    5. then backup your 1.2.6 database and files
    6. then restore your 1.2.6 database OVER your 1.3 database, and run the zc_install database-upgrade step
    7. redo any admin-settings in the 1.3
    8. copy your 1.3 files to your 1.2.6 folder (renaming folders is the fastest way to minimize downtime)
    9. test the new site again
    10. turn off down-for-maintenance.
