I'm struggling with the concept of how to change the FONT colour on my EZPages header from blue to white so that it matches the rest of my site - are there any easy-to-follow instructions around please ?

I think it's version 1.36
You can do it a couple of ways, either use the text editor in Admin to change the color of the text, or look in your stylesheet for the Ez pages css codes and change it there.
There's also a mod that's supposed the enable you to create css sheets for your easy pages, but I couldn't figure out the instructions and can't find any posts about it.
So I would say use your Admin text editor. I have also added style statements to the top of my ez pages and created all kinds of neat looking pages.

What I can't figure out from the instructions is what to or how to name the stylesheets. If you figure it out could you please post it so myself and everyone else who may not understand it can use it?

I'm still struggling with changing the text color on my EZ Pages top.
I've gone to :
shop/includes/templates/classic/css/stylesheet.css
and found
navEZPagesTop {
background-color: #abbbd3;
background-image: url(../images/tile_back.gif);
font-size: 0.95em;
font-weight: bold;
margin: 0em;
padding: 0.5em;
}
is this the right place? there is nothing there about text colour.

With CSS if what you want isn't there, you just add it. For example, you could change the color of the EZ-Pages links at the top by adding the following to your stylesheet#navEZPagesTop a {color: white}
#navEZPagesTop a:hover {color: green}
