I've searched however I cannot find it. I thought it would be in /email/email_template_checkout.html, however no luck..
It currently looks like this for the customer in their e-mail receipt (370 being the model):
Products
------------------------------------------------------
1 x BLUE WIDGET (370) = $1.99
------------------------------------------------------
The way I have my cart setup the model is only used for admin purposes, not for the customer.
Any help? Thanks!

Ha,
You would need to edit the file:
/includes/classes/orders.php
Look for model and where it is added in the email to make changes ...
NOTE: there is not an overrides directory for classes ...
So make great notes for future upgrades so you remember ...
What I do is use my initials on the top of the .php file
Example: <!--MSC-->
So on an upgrade I use admin panel/ tools/ developers tool kit
- And I search for: MSC
