Missing Part of order details

PHP version 5.6.0
MySQL version 5.5.57

So I am wondering if this is an issue with sanitizing strings from text input. We engrave products and provide text inputs with each engravable product on our site. Not very often nor is it repeatable by me, we get an order that the actually text has been truncated after the order confirmation email was sent. This time between the orders placement and it being processed in Zen Cart is about an hour. It is saved in the data base incorrectly. This is the email that was sent to our customer:

The only thing I see that "may" be the cause is the length of the dash in the customers order. It looks longer in their email than any of the ones I have used. I tried to recreate this using the dash from the top of they keyboard and from the 10-key pad. I have a windows 10 PC and Logitech keyboard.

Any thoughts? This doesn't happen that often but this isn't the first time. Unfortunately I can't remember the other order that had the issue but I also think it was a similar truncation. Can anyone point me in the right direction?

I'm not sure if it's related or not, but ...

Given you said you're running Zen Cart v1.5.1 on PHP 5.6, it may be worth noting that you're likely triggering dozens of PHP warnings and errors due to incompatibilities of your older Zen Cart version on the newer PHP version that your Zen Cart wasn't designed for.
