How would I go about importing all of my customers user names, passwords, email address... everything, into zencart from an excel file that I got from my old site?

You'll need to check out the database structure, and import the data using phpMyAdmin ... into the right tables and fields.

Then you'll need to convert all the passwords to the encrypted Zen Cart format. There's a tool posted here to do that:
