Is there any way with zen cart that I can mark an order as "shipped?" I see I can mark it as "delivered," but no "shipped," and nowhere to enter a tracking number?

You can change the the status name "delivered" in admin to "shipped". When we update the order to "dispatched" we eneter the tracking number into the comments field.
I also would like to be able to have the drop down say shipped or ordered closed so I don't have to keep going back and updating. Mainly the reason why I would like it to be updated with the drop down is so when I look at it high level, I know that order has been processed.

go to admin > localisation > order status and you can change the stautes to whatever name you like. Then when updating an order select the relevant status and that will be the new status for the order
