When setting up the categories you have the option of setting up a "Sort Order". I would suggest using a numbering system of 10s - i.e. the first as 10, second 20, third 30 and so on. That way if you add categories later that need to between other categories you can use other numbers. To add the sort order to existing categories, use the edit button on the categories list page.

im not exactly finding where the edit categories is located
Look under admin->catalog->categories/products. On the category list, click on the green spot with the e inside it. That'll allow you to change the sort order (at the bottom of the screen).

be default zen arranges by alpherbetical order, you can over rule this with the sort order and 0 is top 100000000000000 is bottom, if you have more then one set to 0 or 1 etc ie two catagories with sort order 2 for example they will be positioned above catagories with a higher number but lower then lower numbers, but also the two catagories with sort or 2 will be posistion in alpherbatical order.
EXAMPLE: LETTER IS THE CAT AND NUMBER IS SORT ORDER
Y 1
Z 2
A 3
B 3
C 3
X 4

If you position your cursor over the icon, it'll tell you what it is. Same thing for the icons available in the products.
