Rather than have a traditional shopping cart / checkout, I would simply like a user to be able to search for items in the product database and then, by clicking on an icon next to them, click through from the selected item to another merchant's website.
Does anyone know if this could be achieved in Zen cart and also whether it would be able to track or log the date and time of such click-throughs, together with the site that was clicked-through to.

ZC was not designed for that purpose. You can tweak it to do that, but that would be an overkill.

When you say "can be tweaked" do you mean I could configure it myself (if so, how please?) or do you mean Zen could add this functionality? Thanks

Think about it this way:
You can add the link to the other site in the product's description. This way you will not have to hack any core code.

Now to track the click thru: there are many open source scripts out there that do just this for you.
