ship only to some countries only, based on category

I've figure out how to limit the countries my store can ship things to. Now I need to take it one step further and configure it such that items in category 1 can be shipped to either the US or Canada. Items in category 2 can only be shipped to the US. How possible is this?

i also have a particular product category that i want to be able to ship locally only, and other categories are up for international shipping.

but i don't know how to do it.

any help from members of the forum would be highly appreciated.
