Both your store and PayPal will send you emails automatically when a transaction completes.
PayPal always sends the recipient (you) an email when money is received. Unless maybe you've told PayPal not to do that. That's between you and them.
Your store always sends you an email if you've enabled it in your Admin->Configuration->Email Options screen. That's what the "Extra" email entries are all about.

I had a feeling it was on PayPal's side. Any ideas wherei n paypal to turn on a payment notification when a payment is made through this module (via api access)?
I've had a look at the way we use IPN on a custom built site and I think the different is the business field in the form that gets sent to PayPal. Is there a way to set the value of 'business' with this module?
You don't want to be relying on IPN services for your store's operation. And an IPN is completely separate from any emails they send (even though they may or may not be triggered simultaneously).
Express Checkout (which is far more reliable than the IPN module) uses the API credentials PayPal gives you. And since those credentials identify your account to them, they use the information in your account for their email correspondence to you. And they send emails based on whatever settings you've asked them to send you. Contact them for help in fine-tuning how they communicate with you about activity in your account.

I'm a little confused now. I thought I was contacting the PayPal Express Checkout in here.
I'm confused about what you're asking now, too. As to your primary question, I've already told you that your problems with receiving emails from PayPal is an issue on PayPal's end.

I understand that the email is from PayPal. But, its possible to post a fiend to PayPal which will define which email to email to. So I was wondering where I can edit this in the module's code so I can stick an email address in?
