Changing quantity

Question: Is there add on that allows for easy changing of inventory as opposed to deleting the order and recreating it? Or an easier way to do a refund if 9 were ordered, but only 7 were in stop. Gosh, I hope this is clear...i'm not sure how to put it in words.

Sorry...let me make this a little bit clearer. Ok, a customer order 9 items, but we only had 7 in stock. However, the order went through as 9. Is there a way to change the quantity to 7 instead of deleting the order, refunding, and doing a new order for 7 items?
