I'm wanting to keep my old site up and running but also want to build a new clean store and then switch over.
I came across this https://www.zen-cart.com/entry.php?3...d-of-upgrading
but any better way of doing it?

This is not intended as an advertisement: The only better way of doing it than the above that I know of is to have someone else do it in accordance with that instruction...
There are minor "caveats" throughout the process that can be taken on a case-by-case basis, but that process will maintain your live site while giving you the opportunity to "learn" (make as many mistakes as you want) and create your new site...
There are some things to consider before starting out... Where is it that the two different sites with different operational requirements can exist (either "together" or separately) to support the desired goal... If not able to live together on a single site, what wll be the plan to make the "final" transition? If nothing else, remember the real goal is to continue making money while preparing to continue making money... You shut down your site, that process is on hold until one or the other is brought back up... If you increase your php version, you may not be able to decrease it back... Etc.....
So, all sorts of things considered, is it worth the aggrivation and time to try to shortcut a proven process??? Or do you want to keep making money?
