Huh, the picture says otherwise than what I describe below, but the response is as I describe.
Let's see. Your attribute: please choose a bottle size is not marked as display only in the attributes controller. As such when you have added (assuming you have) the attributes as variants that the option "please select bottle size" received no quantities, therefore when the selection(s) were displayed the please choose a bottle size option had no quantity assigned and therefore displayed out of stock.
The listing though does not identify that all product are out of stock, only that the first "please select a bottle size" option is out-of-stock. The others, show that there is stock of some amount and selection of one of them should update the second dropdown unless there is a pre-existing javascript issue or the javascript is not loaded in the correct sequence.
Regardless, your please select option really should be made display only so that when/if customers select that option ZC will know that they are not selecting a true product and that they should be warned about the faulty selection. At least that's the intended operation.

No you're right which is why in the moments I still had available I modified the first paragraph of my response. It's been a while since I've tried using SBA with DD and a display-only attributes... typically, with DD enabled it serves as the display only part and one is not required. I thought that the code also removed the display only/default option, but as said it's been a while to look at that aspect.

Does that mean that you are now using the additional option name type that is added by SBA? (admin->catalog->option name manager) instead of the plain dropdown?

No, I had no clue that this was even available.
I had typed the "I'm an idiot" comment before I saw that you edited yours. I was thinking that I had it backwards, but infact i had it marked correctly.

Yeah, something about your setup is backwards. Could be template related could be something further. I've seen something before that operated backwards on the display only options.
It will/or is likely to cause some issues if the store continues to be so backwards as display only attributes do not show up in the SBA admin variant development side. :/
