Once the coupon has been deleted it can't be undone. But you can recreate the coupon as the same way you did it.
I do not want to delete the coupon, I just want to cancel the use of coupons for that customer.

Once the coupon has been used on a previous order and it cannot be used again. The only way is to create another voucher for another order.
If the Order was canceled and you want the customer to be able to use the Discount Coupon on another order, you would need to remove the record for its previous use in the table:
coupon_redeem_track
