Only One Currency
I am setting up my Zen Cart in Canada. I would like to only have one currency displayed since I am only selling my products in Canada.
Second, is there a way to manually put prices on items without having the currency calculator mess the prices up. For example, I have an item that I would like to sell for 46.95 (CAD). If I enter this amount in the catalog, it will display 57.21. How do I fix this ??

Just go into Admin > Localization > Currencies and delete all currencies other than CAD.
When you only have one currency, no currency conversion will take place and the price you enter will be the one that is displayed (unless you enter a net price and have that your products should be displayed with tax).
