v155 Advice on organizing classes for a tutoring site

Hello! I'm new to Zen Cart and want some advice on how to organize things.

I'm setting up a tutoring/teaching website. There are a number of classes/tutoring topics available (e.g., "English 1", "English 2"). There are also a number of time slots available (e.g., "Friday 7pm", "Friday 8pm"). My dream is that a prospective student would first choose a class that they want (product?) and then, after they've chosen the class, choose a time slot that they want for it (option?).

The trick is that, if one student chooses a class (any class) at Friday 7pm, I would like Friday 7pm to be unavailable for any future students. I'm not sure if having the time slots set up as options is suitable for this. Is there any way to link options between different products so that choosing an option in one product affects whether it's available in another product?
