How Can I do Refund?

I am testing the fresh installed zencart 1.3.8a and I am new to zen-cart. I cannot find the way to refund the order from customers. Can anyone tell me if the refund function is available or not?

If you are referring to money being Refunded then that is dependent upon how the money was collected.

If PayPal was used you must refund through your PayPal account.
If a Merchant account was used (Authorize.net, Linkpoint for example) then you refund through your Merchant account.

I can refund from Paypal but how come my order still showing in the order list? Also Can I reverse the order or modify the order on my customer request? Let say my customer call me want to remove one item from his order#. If yes how can I do so?
