Payment Questions
If I'm using one of the built-in payment modules;
1. Does ZC automatically email BOTH the customer and the store owner a copy of the receipt?
2. Does ZC automatically email the customer a confirmation of their order? And does the store owner receive a copy of it?
-Or-
Does that have to be configured via my payment gateway?

As far as Zen Cart goes, ZC only sends an order-confirmation email. That goes to the customer always, and optionally to you, based on your ZC settings.
As far as receipt emails, depending on the gateway, there may be an option in that module's ZC admin settings to control it. Failing that, you can change it by calling your gateway's support line.
