Copied menu.css and stylesheet.css from zen-cart-v1.5.1-full-fileset-09182012\admin\includes over to my server. Thanks for letting me know that I can copy over the more generic folders...

Ugh okay, so by putting the header in the includes/languages/english I got my custom color scheme back, but does anyone know the file that gives the the top menus on the admin panel...
