Roger,
You can use the Developers Tool Kit under Tools in the Admin to find what files list the headerWrapper.
Just in case you are not already using the override system, now is the time to start.:yes:

The first thing I'd like to know before advising is - what purpose will be served by removing the headerWrapper? What is the overall goal of your work here?
Are you trying to remove the whole header, and just use sidebar(s)? If so, take a look at my site.

how did u get the categories along the side there and add all the extra pages like for shipping, privacy...etc.

Those are part of the stock setup. I did some styling in my stylesheet to change the appearance of the sideboxes.
Some of the links, like About Us and Event Schedule, are ez-pages for which I inserted custom links in the transplanted header nav.
