Chinese in forms

Hello.

We've recently expanded into China and we are now getting our forms filled out in chinese.

Sometimes, the text appears garbled (looks like ascii and random text instead of chiniese) when we receive the email. We have the windows language packs installed.

Our Zencart is running on an Apache server. Help.

Is there any way to fix this?

What character set are you using? Only certain character sets will support Chinese characters, even if you have language packs installed.
