Without writing a bunch of custom code for this - you can massage what shows up by changing the added date in your DB and then the admin > config > maxium values > New Product Listing - Limited to ... > select a range

But thats just a quick fix, right? It won't carry over to next month when I input a bunch of new products - or will it?

You will have to manage the add date as you add items that you do not want listed as new or are to be "Bargin Bin" items and manually
