Shipping Questions

My site deals mostly with live animals, so next day shipping is a must. I want to offer three different rates. How do I add custom shipping options with my own descriptions? I want to charge a $5 handling fee and free for local dropoff/pickup(plus handle fee), $7.99 for next day by ground customers(plus handle fee), and then $22.99 next day by air customers (plus handle fee). I was also hoping to discount the shipping rate 50% after the order gets to a certain dollar amount... is that possible?

I also have a catagory of non-live goods that could be shipped snail mail without issues... so ground by weight would be fine for those.

Another quick one to add on here. How do I add a desired arival date questions to the checkout process? Shipping live animals requires someone to be there when they arive, so I need to know when they will be there.... Is it possible to have a calendar integrated drop down box with dates that I can choose? Obviously holidays should not be available for shipping options, so I would need to have control over what days could be chosen for delivery. Any ideas?

Here is a delivery date module that will let the user enter in a del. date. It will not calculate $ or do anything but get the date from the customer AND you can disable dates. Its pretty neat, and easy to install... google this:
