Zone Rates shipping help required please

I apologise if this has been posted before.

I am using Zone Rates with the standard 3 rates set up: GB, Europe & Rest of the World.

I do really need to have another Zone especially for South Africa (at the moment) where I need to ensure that the customer is automatially charged for International Signed For delivery as a lot of mail to SA seems to go missing

Is there any easy way to add additional Zones to the Zone Rates area please?
