That's a big job. It looks like it could be done, but it's probably beyond the scope of a forum post.

What they've done, in Zencart terms, is list subcategories in the main page when a category is clicked, listed vertically, and insert clickable product images of the products in that subcategory in the listing.

It's possible someone has done something similar with Zencart. You might check the 'showcase' above.
