No code edit here. This is a LANGUAGE FILE change.

The word "model" appears in about 17 language php files, and to find all references in language files, use the DEVELOPER TOOLKIT under ADMIN>>>TOOLS.

Then you change, FOR EXAMPLE:

define('TEXT_PRODUCT_MODEL', 'Model: '); 
to

PHP Code:
define('TEXT_PRODUCT_MODEL', 'SKU: ');
