Thank you for the suggestion. Here's what I've done and where I'm stuck.
I uploaded the unzipped Apple_Zen_2.0 template to /includes/tempaltes so now there are three directories in /includes/templates (Apple_Zen_2.0, classic, and template_default).
Now when I go to admin-tools-template selection my only choice is the classic contemporary green because the template directory is classic.
Do I need to move the Apple_Zen_2.0 into the classic directory or is there a way in admin-tools-template selection to change the template directory so I can select the new template?

The 'includes' folder containing the Apple Zen template needs to be uploaded to the root of your site, not the templates folder.
Most, if not all, templates and other mods work that way since there are usually other than template files which are overridden.
You can delete the folder you uploaded to 'templates' and re-upload to root, and you will see the option in admin.
