Anyone know how to change the date/time to my local time so the receipts are displaying local time in Australia instead of Canada or USA

thanks for that but that is not the main problem.
the problem is that the time is incorrect, in that the time is not Australia time but Canada or USA time. Any help with changing this?

In the Add Ons section there is Time Zone module which should do what you want.
