Hello, I've seen in php info in admin of zencart that at the admin server there is the email that I've inserted months ago at the moment of installation.
Can I modify this email? How can I do?

If you're referring to email addresses used in a Zen Cart store, you can set them all in Admin->Configuration->Email Options
If you're referring to something specific to the webserver you're on, you'll need to talk to the server administrator for assistance with that..

_ENV["SERVER_ADMIN"][email protected]
But this email is in automatic setting by server or I have setted this email I at the moment of installation?
I would change this email, so in this case I ask to the server?

That is not an eMail address you normally can change. It is not used by Zen Cart though so no problems.
