I have my categories set up, and also my subcategories. But some of my sub categories need sub sub categories. How can I do that?

I figured it out, thanks!
I had a product in the sub category and that was preventing me from adding sub sub categories, I believe. Once I deleted the product, I could just click the sub category folder to add sub sub's. So adding sub sub's was exactly like adding sub categories. Hope this is helpful to someone else.
Thanks for the update on how you were able to fix your data to allow the addition of new sub categories and new products and how having one in a category will disable the ability to have the other ... :smile:
