I'd like to make my categories tabs menu a drop down with white lettering and a black background.
I know I'll have to dig into the stylesheet somewhat but is there an add-on available for a kick start?

Look in Free Addons for combinations of CSS, horizontal/header, dropdown/dynamic, and the like. There are several that may do the job you want.
